Ingredients (makes a LOT of food)
- 1 cup flour
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1/2 teaspoon baking powder
- 1 egg
- 1 cup beer
- 1/2 cup plain yogurt
- 1/2 cup mayo
- 1 lime, juiced
- 1 jalapeño, minced
- 1 teaspoon capers, minced
- 1/2 teaspoon dried oregano, cumin, and dill weed • 1 teaspoon cayenne
- 1 lb shrimp, cod fillets (white fish). Don’t use tilapia here, kids. It is not worthy of the sauce and will bring shame to your family
- Corn or flour tortillas (flour if your feeding dad)
- 1/2 medium head cabbage, shredded
Directions
- Heat oil in deep fryer to 375°F
- To make sauce: In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Add jalapeño, capers, oregano, cumin, dill, and cayenne.
- In a large bowl, combine flour, cornstarch, baking powder, and salt. Blend egg and beer, then quickly stir in the flour mixture (don’t worry about a few lumps).
- Dust shrimp/fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. Lightly fried tortillas or heat in microwave. Some assembly required. Add guac. Or sliced avocado. Oh, and shredded cabbage is nice. And don’t forget the cheese. And salsa. You figure it out from here, dumbass.
