Ingredients (6 servings)
- 1 can (15 oz) black beans, drained and rinsed
- 1 serving (9 oz) ready-to-serve brown rice (get Trader Joes)
- 2/3 cup frozen corn
- 2/3 cup fresh cilantro
- 2/3 cup chopped green onions
- 1/2 teaspoon salt
- 6 whole wheat tortillas
- 4 teaspoons olive oil
- Optional, guacamole, salsa, sour cream
Directions
- Preheat air fryer to 400
- In a large microwave-safe bowl, mix beans, rice, and corn. Nuke (covered) 4-5 min, stopping halfway to stir
- Mix in cilantro, green onions, salt
- To assemble, spoon 3/4 cup bean mixture to center of each tortilla. Fold corners, roll up.
- Place fold side down in air fryer basket, brush with olive oil
- Cook til brown and crisp (best guess: 7 minutes, but check it)
- Serve with guac, salsa, sour cream
- Note: While this is quite hardy, shredded chicken can be added
