Deep Fried Scallops

Comments: My mom would laugh about this recipe, then tell you the story about how I hit her foot under the table with a scallop she wanted me to try.

Ingredients: 

  • 1 LB scallops
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp pepper
  • 2 large eggs
  • 1/4 cup water
  • 1 1/2 cup bread crumbs (Panko if you want crunchy scallops)

Directions:

    1. Heat deep fryer to 340 degrees
    2. Combine eggs and water, mix thoroughly
    3. Add bread crumbs to a second bowl
    4. Combine everything else (sans scallops) to a third bowl
    5. Dig scallops in flour mixture, then eggs, then bread crumbs
    6. Cook for 2 minutes
