Ingredients:
- 1 LB scallops
- 1/2 cup flour
- 1/2 cup cornstarch
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp pepper
- 2 large eggs
- 1/4 cup water
- 1 1/2 cup bread crumbs (Panko if you want crunchy scallops)
Directions:

- Heat deep fryer to 340 degrees
- Combine eggs and water, mix thoroughly
- Add bread crumbs to a second bowl
- Combine everything else (sans scallops) to a third bowl
- Dig scallops in flour mixture, then eggs, then bread crumbs
- Cook for 2 minutes
