Comments: This is it. This is the recipe that started this cookbook. It will make your life worth living. You start the night before and finish in the morning. This is a family recipe that was said to come from my aunt’s college professor in 1947.
The Night Before
- Dissolve 1 Tbsp of dry yeast in 1/2 cup of lukewarm water and add to:
- 3 cup milk
- 4 cup flour
- 1/4 cup sugar
Then, In The Morning
- Mix in:
- 1/4 cup oil
- 1 1/2 tsp salt
- 2 eggs beaten
- 1/2 tsp baking SODA in 1 Tbsp of water.
Important note:
Ideal sourdough waffles start with batter that is light and fluffy. The best way to achieve this is to wait an hour after you’ve mixed in the final ingredients in the morning. Use real maple syrup or molasses (my fave). Kids, try cinnamon sugar.
