Szechuan Pork and Green Beans

Chicken, Entree, Pork

Ingredients

  • 1 1/2 cups white rice 
  • 3 cups water
  • 1 lb ground pork or ground chicken
  • 1 cup baby bella mushrooms, chopped
  • 2 teaspoons cornstarch
  • 1/8 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 teaspoons olive oil
  • 2 cups green beans, trimmed
  • 2 cloves garlic, pressed or minced
  • 3 tablespoons hoisin or oyster sauce
  • 1 tablespoon honey
  • 2 tablespoons low sodium soy sauce
  • Crushed red pepper to taste

Directions

  • Place rice and water in a lidded pot. Bring to a boil, reduce to a simmer, cover, and let cook for 20 minutes.
  • In a bowl, combine pork, mushrooms, cornstarch, salt, and pepper.
  • In a large skillet or wok, heat oil over medium heat until it begins to shimmer. Add pork mixture. Brown and crumble until almost cooked through.
  • Add remaining ingredients and cook until green beans are bright green and crisp tender.
        

Serve over rice.
