Ingredients
- 1 1/2 cups white rice
- 3 cups water
- 1 lb ground pork or ground chicken
- 1 cup baby bella mushrooms, chopped
- 2 teaspoons cornstarch
- 1/8 teaspoon kosher salt
- 1/4 teaspoon pepper
- 2 teaspoons olive oil
- 2 cups green beans, trimmed
- 2 cloves garlic, pressed or minced
- 3 tablespoons hoisin or oyster sauce
- 1 tablespoon honey
- 2 tablespoons low sodium soy sauce
- Crushed red pepper to taste
Directions
- Place rice and water in a lidded pot. Bring to a boil, reduce to a simmer, cover, and let cook for 20 minutes.
- In a bowl, combine pork, mushrooms, cornstarch, salt, and pepper.
- In a large skillet or wok, heat oil over medium heat until it begins to shimmer. Add pork mixture. Brown and crumble until almost cooked through.
- Add remaining ingredients and cook until green beans are bright green and crisp tender.
Serve over rice.
