Chicken Sausage White Bean Skillet

Chicken, Entree, Lunch

Comments: Nice warm meal for a cold November day.

Ingredients: 

  • 4 fully cooked chicken sausage links
  • 2 Tablespoons cooking oil
  • Small onion
  • 2 cloves garlic
  • 2  15oz cans cannellini (White) beans
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1/4 tsp smoked paprika
  • 1/4 tsp cracked black pepper
  • 1 Cup chicken broth
  • 2 cups spinach, roughly chopped
  1. Slice the sausage 1/4 to 1/2″ thick
  2. Heat large skillet to medium heat, add 1 Tbl oil
  3. Add chicken, brown on both sides (1-2 min each side). Remove.
  4. Add remaining 1 Tbl oil, dice onion, minced garlic. Saute 3 min until onion is translucent and garlic is fragnant
  5. Add drained beans (do not rinse beans), salt, oregano, paprika, pepper, chicken broth
  6. Gently stir, simmer for 4-5 min.
  7. Add spinach, sausage, stir
  8. Serve with crusty bread, season with pepper
