Comments: Nice warm meal for a cold November day.
Ingredients:
- 4 fully cooked chicken sausage links
- 2 Tablespoons cooking oil
- Small onion
- 2 cloves garlic
- 2 15oz cans cannellini (White) beans
- 1/2 tsp salt
- 1/2 tsp oregano
- 1/4 tsp smoked paprika
- 1/4 tsp cracked black pepper
- 1 Cup chicken broth
- 2 cups spinach, roughly chopped
- Slice the sausage 1/4 to 1/2″ thick
- Heat large skillet to medium heat, add 1 Tbl oil
- Add chicken, brown on both sides (1-2 min each side). Remove.
- Add remaining 1 Tbl oil, dice onion, minced garlic. Saute 3 min until onion is translucent and garlic is fragnant
- Add drained beans (do not rinse beans), salt, oregano, paprika, pepper, chicken broth
- Gently stir, simmer for 4-5 min.
- Add spinach, sausage, stir
- Serve with crusty bread, season with pepper
